The Tucumán tradition

From the cradle of the empanada

The Tucumán empanada blends Spanish culinary traditions, brought to the Americas by colonizers, with indigenous ingredients and cattle culture. Born in the Tucumán province of Argentina — known as the "Cradle of the Empanada" — it is celebrated for its juicy, knife-cut beef and a strict no-potato rule.

Matambre

Beef flank steak, meticulously hand-cut with a knife rather than ground.

The spices

Generously seasoned with cumin, paprika, and green onions.

The repulgue

Sealed with 13 to 15 decorative folds — the repulgue — to hold in all the juices.

The empanada is so woven into Tucumán's identity that the city of Famaillá hosts the National Empanada Festival every September, and the Tucumán empanada is celebrated around the world. Traditionally baked in a clay oven or fried in beef fat, it's always served with a wedge of lemon for a fresh, acidic pop.
